Gluten Free Cupcakes

Look who finally decides to update, but it's only with a cupcake recipe! I must be hungry!!

Gluten-Free Goodness Cupcakes

Ingredients

2 cups rice flour
4 tsp baking powder
1 tsp salt
4 Tbs unsalted butter, softened
6 Tbs sugar
2 large eggs
1 tsp vanilla extract
1 cup low-fat milk
2 large egg whites
1 cup sugar
2 Tbs light corn syrup
3 Tbs water
1/4 tsp cream of tarter
1 jar (1.25 oz) Cake Mate Decors nonpareils

Directions

1. Preheat oven to 400 degrees F. Line 12 muffin cups with paper liners. Combine rice flour, baking powder, and salt in a medium bowl and set aside. In a separate bowl, beat the butter and sugar with a mixer until light and fluffy, about 3 minutes. Add eggs, beating well after each addition. Mix in vanilla extract, then add flour mixture alternately with milk until just blended.

2. Divide batter among prepared liners. bake in the center of the oven 13 to 17 minutes, or until a toothpick inserted into center comes out clean. Transfer to a wire rack and let cool completely.

3. To Decorate: Combine egg whites, sugar, corn syrup, the water, and cream of tartar in a deep bowl. Place bowl over a saucepan filled with 1" of summering water. (The bowl should not touch the water.) Beat with a hand mixer for 10 minutes, so that egg whites are heated to a safe temperature. Spoon into pastry bag with a plain 1/2" tip and pipe onto cupcakes. Sprinkle nonpareils around the rim.

Reason #1 I should not go to Walmart "unsupervised" aka by myself. A trip for juice and dog food cost me $70.00.

Last night I had to make a quick run to The Wal-Marts. I needed a few essentials, namely Benadryl since Bean has once again been attacked by blood sucking insects, and I wanted to look at nose rings. My sister "M" who is attending Vet school in the Caribbean has managed to lose hers. I don' t know how, but this is also the girl that has dropped her cell phone in a toilet (twice), a pool, and left if in a hot tub all night, and lets not discuss the time she dropped her whole purse in a porta-potty, at a Nascar race.
Anyway, back to the evil known as Wal-Mart. I can NEVER get out of there spending less than $70.00, a simple run for dog food and diapers has on occasion cost me over $100.00. I was perusing the nose rings, which are in a locked case on the counter where there was not 1 but 2 Wal-Mart workers ahem "working" (yea right). Neither one of these ladies asked if I needed help, or if I wanted to see something. I got so frustrated attempting to get their attention that I just left. I hate going there and having to ask someone for help. They all act like I'm putting them out or something. The way the cashier acted you would think I asked him to actually be friendly or something.

A-hole drivers

Dear A-hole driver who got pulled over this morning,

I don't know if you realize this or not but the hours from 6:00am to about 9:30 are prime rush hour traffic. But you chose to do something that got you pulled over at 6:30 this morning. That would be A-hole move #1, secondly you chose to pull over and STOP just to the right of the freeway as close to the retaining wall as you could get. This was A-hole moves #2 and #3.

When you stopped right off the freeway it caused the Police Officer to pull over behind you and leave his flashing blue and red lights on. These flashing blue and red lights cause EVERY SINGLE CAR to SLOW WAY DOWN. Hence being A-hole move #2.

A-hole move #3 was when you chose to stop where you did not only putting yourself in danger but more importantly putting the Police Officer in danger because he had to get out of his car and walk to your dumbass all the while being a mere inches away from a busy freeway. Had you been smarter you would not have been pulled over in the first place but you would have exited the freeway and stopped at a safer place. I can guarantee the officer would not have thought you were trying to run. I can only hope that officer slapped you with a big ticket with a hefty fine.
